Eggs and Santo Amaro Tuna

Cooking Time: 20 minutes.

A recipe for breakfast or the complement for a perfect brunch. These eggs are delicious, colorful and full of flavor!

For two servings:

  • 1 Santo Amaro Tuna in Olive Oil and Turmeric Curry.
  • 2 Eggs -1/2 sliced red onion.
  • 1⁄2 sliced red bell pepper.
  • 1⁄2 cup canned tomatoes.
  • 1 minced clove of garlic.
  • A handful of olives.
  • A sprig of basil.
  • Salt and pepper.

In a frying pan add a splash of olive oil, brown the garlic, onion and bell pepper, add the tomato and cook for 10 minutes over a very low heat. Add the eggs, a little salt and pepper and cover for 3 minutes.

Uncover and add the olives and Santo Amaro tuna, or possibly replace it with Santo Amaro sardines. Add a finishing touch of basil and enjoy!
